MMMM! Best Banana Muffins Ever!

Last week I caught the banana special at the local grocery store... Well, this week they're getting a bit on the black side, so thought I'd whip up some muffins.... WOW.....  Truly the best and easiest banana muffin recipe ever! 
I simply went to google and typed in 'Best Banana Muffins' and this is what I found......Cat Can Cook! 

So.... Here's the recipe!
Banana Muffins (makes 12 muffins)
(With my alterations, this recipe makes 8 regular muffins and 4 large!) 
3 or 4 Large bananas, mashed (the more bananas the moister, so I use 4)  OK So, Cat said 4 & Rhonda say's 5!! MORE is better!!

1/2 cup white sugar (original recipe calls for 1 cup, but I don’t like them too sweet) - I agree with Cat - 1/2 cup white sugar!

1 slightly beaten egg  (I used a large brown shelled egg - only kind my chix lay!)

1/3 cup melted margarine or butter (butter only here!)

I put the bananas, sugar egg and butter together and mixed well with mixer then set aside while I mixed the dry ingredients in a separate bowl.

1 teaspoon baking soda

1 teaspoon baking powder
1/2 teaspoon salt

1 1/2 cups flour

In a separate bowl, mix together baking soda, baking powder, salt and flour.

Mix wet and dry ingredients slightly together with a wooden spoon!

Pour into greased muffin tins, and bake in 350 degrees F oven for approximately 20 minutes.

*These are much more flavorful the next day, and they freeze very nicely too!

Million Dollar Shrimp on the Grill!!!

WOW! Jay & I played with our regular shrimp scampi recipe tonight and came up with the BEST EVER!!

I wish I would have taken a picture BEFORE we ate them!! hahaahaha!....

Anyway, here's the recipe...

Ingredients:
1/4 cup olive oil
1/4 cup lemon juice
1/4 cup crushed garlic
2 tsps red cyanne pepper powder
5 TBS parsley

1 bag cleaned, deveined and detailed raw shrimp

Mix all together and marinate for atleast 30 minutes.  In the mean time, fire up the grill and baste top grate with oil (we used canola oil) ....  Place shrimp on skewers and baste with marinating sauce....   Place on top shelf of grill and cook with lid open for approximately 4 minutes, turn and cook another 4 minutes or until done (opaque in color) 

While the grill is warming up, start your angel hair noodles... cook til done, drain under running warm water, place in bowl and add real butter, stir until covered.....

Dish up desired serving of angel hair noodles and add a skewer of shrimp.................... WOW an absolute treat!!!!  ENJOY!!!

Recipe Folio Set
Folio & 4 Recipe Cards

I absolutely love the way Bo-Bunny's Kitchen Spice Theme Set came together with Lindsay's Stamp Stuff Recipe Folio and Recipe Digital Stamp set to create this recipe folio!   


Recipe Folio 

Lindsay's template was so easy to resize and cut for this folio and card set!  I used Design Studio and my Cricut Expression to cut the folio.

For the layered scalloped circle, I used my cricut & Accent Essentials to cut 3" and 2.5" scallop borders from Bo-Bunny's Kitchen Spice Set. I printed the 'from my heart ~ from my kitchen' circular digi stamp on Basic Grey's -Happy (pink), and used my new Fiscar's 2" circular squeeze punch to cut! Wow! Talk about perfection! I resized the Heart with buttons using Corel Photoshop II, printed and colored the buttons with  markers then popped it from the inner circle for added dimension. 

 
I printed the recipe cards on Basic Grey's Designer Cardstock. I used the pink paper from the 'Happy' Set -- I absolutely love the way digi stamps print on this paper!  I inked the edges of the recipe cards with Color Box Fluid Chalk inkpad - Creamy Brown - WOW...Love that ColorBox Fluid Chalk!! ......So SMOOTH and CREAMY!!!
